Spenser served his mission in the Dominican Republic.
He loved his time there and has some of the craziest stories.
He brought back souvenirs which included a ginormous spider, flag, money, wooden carvings, "fat" ties, pistol pocket church pants and maps and little trinkets. But perhaps one of my favorite things that he brought back from his mission was his fried plantain recipe.
Gosh, they are so good!
Yes they are super high in cholesterol, yes they'll probably stop your heart, kidneys and liver, but they are delicious. We don't eat them very often, only when Spenser is feeling nostalgic.
So you can guess- he was mission "home-sick".
So, we busted out these banana impostors and got our frying on.
On the menu was Cilantro Lime Salmon (which is honestly the best salmon recipe I've found yet) green beans, and fried plantains.
Talk about yum.
Aria even enjoyed them, which made a papa pretty proud.
It took Spenser back to his Caribbean days- and I loved watching him reminisce.
Eh... she was bored of green beans pretty quick...
