Chicken Cordon Bleu and Shlump!

I decided to go out of my comfort zone and make a few dishes that I haven't tried before. While I have a picture for the chicken cordon bleu, I don't have one for the Shlump. Shlump is a family dutch oven recipe and boy is it good! It may look a bit like food tossed together, but it's the best combo of ingredients ever.

Chicken Cordon Bleu
2 skinless, boneless chicken breasts pounded to 1/4 inch thickness
2 slices of cooked ham
8 slices of pepperjack cheese
1/2 C. Italian breadcrumbs
1 egg, beaten
LOTS of toothpicks

Lay chicken breasts out and place ham ontop and then cheese ontop of the ham. Roll it all together (like you would a cinnamon roll) and stick toothpicks all over the thing so it does not come unrolled. Brush with beaten egg and sprinkle breadcrumbs all over. Bake in 350 degree oven for about 25 minutes or until chicken is cooked through and cheese is melted.


SHLUMP!
1/2 package of bacon cooked and chopped into bite size pieces
1-2 chicken breasts cubed
4-5 potatoes sliced thinly
1 green pepper chopped
1/2 onion chopped
1 1/2 C. pepperjack cheese

Cook bacon and then cook the chicken in the drippings from the bacon.. Place all ingredients in crock-pot except cheese. Cook on low for 7 hours or until potatos are soft. Sprinkle with cheese on top and serve!
